This is one of our favorite non healthy snacks.....great for parties or for watching an awesome movie....or the big game.
Cheesy Chili Dip
1 pound hamburger-fried until brown with 1/4 cup chopped onion, 1 tablespoon cumin, pepper, and salt to taste.
1/2 block velvetta cheese
1 can Hormel Chili-no beans
1 can Rotel tomatoes
1/2 cup sour cream
Put all ingredients in a crock pot. Heat on low until melted. (how long depends on the crock pot) If you are impatient, you can melt on the stove or in the microwave.
Serve with tortilla chips
At one of the showers my Grandma, aunts, and cousins shared a recipe book of their favorite recipes. One that has become a favorite is my Grandma's Frozen Cole Slaw. I have fond memories of making it in her kitchen in Ossian, Iowa one summer. It is a great way to use the produce that is abundant at the end of Iowa Summers. Then in the middle of winter, take it out of the freezer, defrost, and it becomes a tasty side dish for dinner (lunch) or supper (dinner).
Grandma Lien's Frozen Cole Slaw
1 head of cabbage-shredded
1 teaspoon salt
½ cup grated carrots
½ cup chopped green pepper
½ cup chopped celery
½ cup grated onion
Sprinkle salt over the cabbage. Let drain for 60 minutes. Drain well. In the meantime make the dressing and let cool.
Dressing:
1 cup vinegar
2 cups sugar
½ cup water
1 teaspoon celery seed
Combine in a saucepan. Bring to boil. Boil for 1 minute. Let cool Add other vegetables to the cabbage. Pour cooled dressing over all. Put into freezer containers and freeze for later use. Thaw before serving. When thawed the salad will keep for two weeks in the fridge.
When our kids were little, they loved pizza, any kind of pizza. This was a pizza that we had frequently. Mostly because it was quick and easy to make and because all three of them loved them.....the pan never lasted long.
Brownie Pizza
2-1 ounce squares bitter chocolate
1/2 cup (1 stick) butter
1 cup sugar
3/4 cup flour
2 eggs
Frosting:
1 cup powdered sugar
1/3 cup peanut butter
2-3 tablespoons milk
1 1/2 teaspoons vanilla
Heat oven to 350 degrees. In 2 quart sauce pan or double boiler, melt the butter and chocolate over low heat. Remove from heat. Stir in the sugar until well blended. Stir in flour and eggs; mix well. Spread in greased 12 inch pizza pan. Bake for 13 to 17 minutes or until brownie springs back when touched lightly in the center. Cool completely. In a small mixer bowl, combine all frosting ingredients; beat at medium speed until all in incorporated and frosting is smooth. Spread onto pizza. Top with M and M's. Other toppings you could use are reeses pieces, peanuts, coconut, raisins, cherries, or chocolate chips...our favorite is M and M's.
