Strawberry Shortcake...not the doll!
It is almost Strawberry time! Strawberries are a favorite. When I was a kid we went to Grandma Stoen's house and ate strawberries right out of the garden. If we had an ounce of patience, we could wait for Grandma to make all of the wonderful things that she could make.....For sure one of the family favorites was Strawberry Shortcake....It was also the recipe that was made at the Big Canoe Strawberry Festival. It was always good, especially warm from the oven....
To make the Shortcake you will need:
1 egg, beaten
6 tablespoons sugar
2 cups of milk
4 cups bisquick baking mix
Strawberries, hulled and mashed, stir in 1/2 cup powdered sugar
Whipped Cream, vanilla ice cream, or Cool Whip
Combine egg, sugar, and milk in a mixing bowl. Add Bisquick to the wet ingredients. Combine all ingredients until moist. Pour into a greased 9x12 inch cake pan. Bake at 350 degrees for 40 minutes or until toothpick comes out clean.
To Serve: Serve warm. Cut cake into desired squares. Half the square. Spoon strawberries and juice on the bottom square. Top with the other piece. Spoon more strawberries over the top and another dollop of whipped cream. with mashed strawberries and whipped cream.
